I was invited to the Award Winning Italian Restaurant Bice Mare in Souk Al Bahar by the foot of Burj Khalifa on Wednesday 30 December 2015 to try their Degustation Truffles Menu “Classical to Contempory”.
It was a fantastic dinner.
Chef Leonardo Maltese came to our table to welcome us and made us a presentation of the Truffle.
Truffles are worth their weight in gold.
I have contacted Massimo Vidoni who is the Truffle Man in the United Arab Emirates to get some more details on the Truffles.
The below Black Winter Truffle (the latin name is Tuber Melanosporum) weights 930 grams and it is from Carpentras, a commune in the Vaucluse department in the Provence-Alpes-Côte d’Azur region in southeastern France. Black truffles also comes from the city of Norcia in Umbria, Italy.
The season of Black Winter Truffles goes from December to the middle of March.
They are low in calories but contain high amount of vegetable protein, chitin, iron, zinc, fiber, amino acids, vitamins and minerals.
A bread selection with some pesto and tomato marinades.
Chef Leonardo Maltese made the below Ravioli in front of us, it is filled with aubergine and Parmesan, it was succulent.
The Burrata Cheese was so fresh and they shaved thin slices of black truffle on it. The Burrata structure is similar to the regular mozzarella but the center is softer and obviously creamier. It is otherworldly and is definitely worth trying!
Capesante Posciutto D’Oca con Insalatina di Pere, Scallops wrapped in goose ham, pears, pea shoots salad and black truffle.
Chef Leonardo poured the Risotto into the Parmesan Cheese and covered it for a few minutes to let it infuse with the Parmesan.
It was Exquisite.
Risottto al Tartufo Invernale, Carnaroli rice wih Parmesan cream.
The combination of the white truffle oil and shaved black truffles was amazing.
It was sinfully delicious. There’s just nothing like a decadent, Parmesan risotto with truffles!

Filetto di Rombo, Verdurine Croccanti, Tarfufo Invernale, Grilled Turbo fillet served with artichoke, zucchini, carrots and black truffle.
It was good though I felt the Turbot fish was a bit dry.
Medaglioni di Wagyu con Porcini e Tartufo, Wagyu medallion with wild Italian mushrooms and black truffle.
The medallion was very tender and very tasty with the black truffles.
I didn’t eat the wild mushrooms as am not a fan of mushrooms.
A selection of desserts by the Pastry Chef Angela, I don’t recall the names of the below pastries but I cannot forget their mouth-watering flavors and their heavenly taste.
These were a selection of Italian Christmas desserts that you can eat only during the Christmas season.
They were new to me, original but I enjoyed eating them.
Below is the Tiramissu and the Panna Cotta with the berry sauce. My wife told me that the Bice Mare Tiramisu is the best ever Tiramisu she had eaten till now.
I am going to go back to Bice Mare very soon to have another dinner there, I enjoyed a lot the food and the view of the Burj Khalifa and the Dubai Mall Fountain.
Overall, Bice Mare is a very good place to eat Italian Fine Dining Cuisine and if you are a fan of Truffles, you shouldn’t miss such occasion.
